What is currently being used for the hp mosfet in the husky? I think mine is dead and need to replace it but the IRF7807ZTRPBF is obsolete and out of stock everywhere. I tried to look at what’s used in the husky plus but that schematic doesn’t seem to be published anywhere.

We are still using the same.
Husky Plus is the same as Husky except for the higher-spec (pin-compatible) FPGA and ADC.
DMN4800LSS-13 (17k available on Digikey) should be a minor upgrade from the original as far as switching speed is concerned. Glitch characteristics are likely to change, but should be minimal.

Not actually going to do this, but could one theoretically upgrade to a plus by replacing both components?
In theory yes. In practice, the BGA rework involved is no small job! (and would void warranty). Also, Husky Plus has a metal case for better heat dissipation - the FPGA in particular generates a lot of heat.
