Hello. Yes, I think almost everything is possible but smart cards are hard targets. I would recommend you to learn more easier targets. Most of Java cards are EAL5+ with active countermeasures like jittery internal clock, noisy power traces, masking. I would recommend to begin with the cw308-sam4L target board. It has a HW AES engine as well a set of countermeasures against side channel attacks. You can activate them separately and find solutions to break them.
